Birria that doesn’t taste like birria? “Birria El Marino” fails with a rating of 3.5 in Tijuana

For Chef Danny, it was like a meat in its juices taco

On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “Birria El Marino” located at Juan Álvarez 323, Tomás Aquino, Tijuana B.C. On this occasion he tried two tacos: a birria taco priced at $1.5 dollars ($27 pesos) and a quesabirria priced at $3.33 dollars ($60 pesos).

Birria Taco

This taco has birria, onion, cilantro, beans, and it is served on two corn tortillas. Something important to consider about this taco is that it was way too oily, and not because of the red birria grease that usually gives this taco its characteristic color and fried texture. In addition, the meat’s color was very subtle.

When he tried it, Chef Danny said that the birria was interesting because it did not have the classic adobo and pepper flavors used for this dish. He added that it seemed as if the meat had been cooked in its own juices. The tortillas and the beans had a good flavor, however, to him this tasted like a meat in its own juices taco. This is why this taco gets a rating of 3.5.

Quesabirria

This taco has birria, onion, cilantro, red salsa, asadero cheese, beans, and it is served on two corn tortillas. Just like the previous taco, this taco did not have its classic color, and it was served as if it was a mulita (Mexican wrap) with the meat and ingredients between the two tortillas.

Something that Chef Danny liked was that the tortilla was fried, however, it was done with oil. The meat did not have the characteristic flavor and adobo of birria and the sauce was not spicy. Something that it did have was the flavor of the cheese. This is why this taco gets a rating of 3.6.
