In Tijuana, try these "fit" head birria tacos

Chef Danny Betancour's final verdict is now available

In this episode of Una Mordida Tacos Tijuana, chef Danny Betancourt pays a visit to Tacos Edwin, a taco cart located on Boulevard Cucapah, Buenos Aires Sur 22207. This time, two tacos were sampled: one is served in a golden tortilla, while the other is done in a soft tortilla, and both cost 25 pesos (1.25 dollars).

Soft Tortilla Head Birria Taco

This taco, which contains a double white corn tortilla, the head birria, cilantro, and onion, was the first to reach Danny's hands. When he tasted it, he said that having this soft and handcrafted tortilla made him feel like he was eating a vario taco and that the meat was smooth and flavorful.

He also mentioned that the taco isn't as oily as a typical birria taco with head meat. This cue received a 7.6 rating from him.

Cunrchy Tortilla Head Birria Taco

This taco's tortillas are drenched in birria fat in addition to being more crunchy, like a birria taco should be, and it also features birria head, onion, and coriander. When he tasted it, he said that while the tacos seem identical, the taste and texture are vastly different since one is soaked in fat and browning, which adds more flavor.

Another point Danny brought up was that this taco could be considered "fit" because it was not overly oily and did not transfer to the hands. You could just taste the fat of the meat while biting it, but it was not unpleasant. On the contrary, it was harmoniously combined with the protein and all of the taco's tastes, and as a result, this taco recieved a rating of 7.9.
