Adobada taco by "La Cocina D' La Manzana” in Tijuana fails with a 4.2 due to its lack of flavor

This taco got a rating of 4.2

On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to "La Cocina D' La Manzana" located at Avenida Universidad 101C, Indeco Universidad, 22427. On this occasion, he tried two tacos: an adobada taco and a suadero taco, both priced at $2.12 dollars ($35 dollars).

Suadero Taco

This taco has suadero, onion, cilantro, green salsa, and it is served on two store-bought corn tortillas. Due to the taco's small size, Chef Danny said that this was a two-bite sized taco.

When he tried it, he said that despite the tortillas being small and store-bought, the maize flavor was present. Since they were drenched in grease, they had some flavor and were browned. Since it was cooked in its own grease, the meat stopped being juicy. However, it was somewhat dry and with very neutral notes. The salsa got completely lost in this taco. This is why this taco gets a rating of 6.2.

Adobada Taco

This taco has adobada, onion, coriander, guacamole, and it is served on two store bought corn tortillas. Before he tried it, Chef Danny said that he could see that the meat had been griddled, as there were pieces of meat of several different sizes.

Chef Danny added that he was almost sure that the meat would be lacking in flavor; when he took his first bite, he confirmed his theory. He said that that since the meat had been griddled, it lost the texture that it gets when taken from the spit, as one usually cuts it in a more uniform and thin manner, which allows one to appreciate the adobo flavor. Griddling the meat caused the meat to lose flavor as it started to brown beyond what it should have. Chef Danny added that he didn't really like this taco's tortillas and it also seemed as if the avocado was a little old, something he noticed when eating it. This is why this taco gets a rating of 4.2.
