Burned tortilla in asada taco by “Frutería La Única” in Tijuana gets a 6.8

Despite it being handmade, it looked like a burned pancake

On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “Frutería La Única” located at De las Ferias 13001, Lomas de Agua Caliente, 22024. On this occasion he tried an asada taco and an adobada taco, both priced at $2.68 dollars ($47 pesos).

Adobada Taco

This taco has adobada, onion, cilantro, guacamole, red salsa, and it is served on a handmade corn tortilla. Chef Danny claimed that it was a well-served taco due to having a good size and having lots of layers of meat with very good color. But he did say that he needed to try the taco first before giving his flavor verdict.

When he took his first bite, Chef Danny said that the meat was cooked well and it had a fried crust outside, but it felt juicy inside; still, it was lacking in flavor. The salsa gave it the push that it was missing. The guacamole was not aguamole (guacamole diluted with too much water), but it was somewhat diluted. The tortilla had good thickness and size, but it was a little bit dry. This is why this taco gets a rating of 8.0.

Asada Taco

This taco has carne asada (grilled beef), huevona salsa, guacamole, onion, coriander, and it is served on a handmade corn tortilla. At first glance, the tortilla looked a little burned and Chef Danny compared it to a burned pancake. In addition, he said that the cracks he saw in the tortilla were proof that the tortilla was lacking dough and hydration.

When he tried the taco, Chef Danny claimed that he could taste the burned flavor of the tortilla. The meat’s smoked flavor could not be tasted because the burned flavor overwhelmed it all. In the meat, he was able to detect a light marinade with citrus. However, it needed salt and pepper. The salsa had a good flavor as it wasn’t spicy, but the burned tortilla really did affect this taco, which is why it gets a rating of 6.8.
