Unconventional tuna fin taco by “Tacos de Mariscos Walter” delights in Tijuana

This is called the “Taco Presidencial”

On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “Tacos de Mariscos Walter” located at Prolongación Paseo de los Héroes 13051, 20 de Noviembre. On this occasion he tried two tacos: an octopus in olive oil taco priced at $4 dollars ($80 pesos) and a “Taco Presidencial” priced at $2.5 dollars ($50 pesos).

Taco Presidencial (Presidential Taco)

This taco has shrimps, tuna fin, cabbage, purple onion, jalapeño sauce with Mexican husk tomato, and is served on two handmade corn tortillas. The first thing Chef Danny noticed is that these tortillas were fried and drenched in grease and that the taco had a very good size.

When he took his first bite, Chef Danny highlighted the texture of the tuna fin, which was quite jelly-like (similar to marrow). This changed the texture of the taco in a very interesting way, while also giving it a great flavor. The shrimp had a very small size and its taste did not stand out a lot. The tortillas also had a good flavor and since they were two, this prevented the taco from breaking. On the other hand, the vegetables gave it a nice contrast. Without a doubt, the texture and tuna, which was in a type of broth, are what stood out in this taco. This is why this taco gets a rating of 8.3.

Octopus in Olive Oil Taco

This taco has octopus in olive oil, cabbage, purple onion, charred sauce, and is served on a handmade corn tortilla which had been buttered and griddled. When he took his first bite, our host stated that, since it only has one tortilla, the maize flavor is lost completely, especially because of the octopus flavor. The same thing happened with the vegetables.

The octopus was a little overcooked and it was very soft. Chef Danny said that he wished it was a little more firm and not chewy; he added that it being overcooked could be because it was in a type of broth where it is cooked throughout the day. Due to the lack of flavor of the tortilla, the octopus being overcooked, and the lack of seasoning on the protein, this taco gets a rating of 7.1.
