Bittersweet salsa is the highlight of rib taco at “Taco H” in Tijuana

Chef Danny also tried an arrachera taco

On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “Taco H” located at Boulevard Cochimies, Tercera Etapa del Río, in the opposite corner of “Plaza China”. On this occasion, Chef Danny tried two tacos: an arrachera taco priced at $.175 dollars ($35 pesos) and a rib taco priced at $2.25 dollars ($45 pesos).

Arrachera Taco

This taco has arrachera (hanger steak), onion, cilantro, guacamole, beans, peanut sauce, and is served on two packaged corn tortillas. The first thing Chef Danny noticed before taking his first bite is that the meat was sliced in very thick cuts. Though the tortillas had a good size, they needed to be more hydrated since they were a little dry.

Since the meat had a thick cut, it was easy to distinguish in the taco. The beans were a good companion here, in contrast with the watery guacamole which tasted a little bitter and ended up spoiling the dish. The charred peanut sauce had a very good flavor, though Chef Danny tasted something salty which ended up being the meat which was over-seasoned. This is why this taco gets a rating of 6.3.

Rib Taco

This taco has beef rib, watery guacamole, beans, onion, coriander, and is served on two corn packaged tortillas. The first thing that Chef Danny noticed is that the taco had some pieces of fat alongside the meat which, according to Danny, ensures a great flavor in the taco.

Though the rib was a little hard, our host said that this was not a problem since it had a great flavor due to its bittersweet salsa, very similar to the ones used in Korean dishes. The beans created a good contrast and, on this occasion, the watery guacamole ended up helping a little bit since it created a balance with the meat’s strong flavor and the caramelized salsa taste. Though the tortillas were not really anything special, the ribs and the sauce were excellent, which is why this taco gets a rating of 7.7.
