Birria taco’s red sauce impresses at “Tacos El Compita” in Tecate

Chef Danny Betancourt thinks that people in Tecate really like spicy food

On this episode of Una Mordida Tacos Tecate, our host Chef Danny Betancourt went to “Tacos El Compita” located at Av. Revolución 1270, El Refugio. On this occasion he tried two tacos: a traditional birria taco priced at $1.5 dollars ($30 pesos) and a cheese birria taco priced at $2.5 dollars ($50 pesos).

Cheese Birria Taco

This taco has beef birria, Jack cheese, onion, coriander, beans, red sauce and is served on two corn tortillas. When he took his first bite, Danny thought the sauce was quite spicy and he concluded that people in Tecate really like spicy food because he has tried several spicy sauces. The meat, meanwhile, had the ideal flavor, its adobo was present and it wasn’t too salty or too greasy.

The two things that didn’t really work on this taco were the cheese and the tortilla. Since Jack cheese was used, it was too greasy and it didn’t add anything to the taco’s flavor. Also the tortilla’s maize flavor wasn’t noticeable, which is why this taco gets a rating of 7.8.

Though it is a traditional taco in a lot of birrierias, every person and shop have their own way of making it. That is why it is important to distinguish the good and the bad for each place. The taco of this place has birria beef, onion, coriander, beans, red sauce and is served on two corn tortillas drenched in the birria grease. Both the size of the tortillas and the meat serving is considerably big.

When he tried it, Chef Danny claimed that the flavor was more present due to the grease in the tortillas creating a more intense hue. The meat, just like in the previous taco, was quite soft and well sliced, so it wasn’t hard to chew. Danny added that the beans are always a good combination for this type of taco which is why it gets a rating of 7.9.
