“Tacos de Birria El Novillo” in Tijuana gets a rating of 8.9 for their browned quesabirria

On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to "Tacos de Birria El Novillo" located at Guadalupe Victoria 9316, Colonia Zona Urbana Río Tijuana. On this occasion, he tried two tacos: a birria taco priced at $1.79 dollars ($30 pesos) and a quesabirria priced at $4.19 dollars ($70 pesos).

Quesabirria

This taco has beef birria, onion, coriander, Oaxaca cheese, and it is served on two corn tortillas. Two things that stood out about this taco before it was tried were that it was quite browned and drenched in birria grease and that the salsa looked very spicy.

When he took his first bite, Chef Danny discovered that the sauce wasn't very spicy, but the quesabirria was very hot. The Oaxaca cheese had a good flavor as well as the meat, which had a very soft texture. Though the size was smaller than usual, the browned tortillas and the flavor contrasted with each other, which caused this taco to get a rating of 8.2.

Birria Taco

This taco has beef birria, onion, cilantro, and it is served on two corn tortillas. Just like with the quesabirria, the tortillas here were drenched in birria grease and browned.

Chef Danny said that the meat had a very good and balanced flavor. He could feel a little bit of fat and, in this taco in particular, the tortillas were browned which created a good contrast with the softness of the meat. This is why this taco gets a rating of 7.8.
