It almost fails! Quesabirria with no cheese by “Birria El Compa Gera” in Tijuana gets a 6.8

A birria taco with dry tortillas was also a disappointment

On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “Birria El Compa Gera” located at Av Venecia 22220, Villafontana, Fontana IV. On this occasion he tried two tacos: a birria taco priced at $1.47 dollars ($25 pesos) and a quesabirria priced at $2.94 dollars ($50 pesos).

Quesabirria

This taco has beef birria, onion, cilantro, red salsa, cheese, and it is served on two corn tortillas. Before he tried it and after inspecting the quesabirria, Chef Danny said that he was not able to see the cheese, but that it should be there. The tortillas had not been greased in the birria, which is something unusual with this type of tacos.

When he took his first bite, Chef Danny was surprised by the salsa and claimed that he was not able to taste the cheese at any moment, which was completely lost in the taco. He added that though the tortillas looked “inoffensive”, they had a good flavor. He stated that though he was able to taste the birria’s adobo which had been impregnated in the meat, it lacked a “push”; however, the protein had a very soft texture. This is why this quesabirria gets a rating of 6.8.

Birria Taco

This taco has beef birria, onion, coriander, red sauce, and it is served on two corn tortillas. Two things about this taco stood out before Chef Danny took the first bite: the tortillas were smaller than the ones in the quesabirria and they looked too dry.

When he tried it, Chef Danny said that he knows when a tortilla has been fried and when it is dry due to being exposed too much to the air; in this case, this was the latter. The meat was lacking in flavor intensity, the vegetables did not add anything, and our host did not feel the spiciness of the salsa. This is why this taco gets a rating of 5.5.
