On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to a varied tacos stand, a new business without an official name which is located at Calzada Tecnológico, corner with Av. Colegio Militar. On this occasion he tried two tacos: a fried chicken taco and a rib taco, both priced at $1.66 dollars ($30 pesos).
Fried Chicken Taco
This taco has a fried chicken leg, beans, rice, pickled purple onion, and it is served on two corn tortillas. It should be noted that this taco has a fried chicken leg which was shredded in that moment. The cook claimed that it was made Kentucky-style (KFC); this is something that Chef Danny thought was strange and unusual because these tacos are usually served with chicken breast.
The chicken was drenched in red chicharron salsa which had a good flavor and it wasn’t spicy. The onion added a perfect sourness touch. The breaded chicken had a strong flavor, which demonstrates that it was seasoned well. The rice was a little pasty as it was overcooked and the beans did not stand out a lot in this taco. Since the tortillas were steamed, their maize flavor stood out, which is why this taco gets a rating of 6.3.

Rib Taco
This taco has beef rib, rice, beans, salsa, and it is served on two corn tortillas. The first thing to note about this taco was that the salsa had a great color that made it seem like it would have a great flavor. Chef Danny deduced that it had morita, guajillo, and pasilla pepper.
When he tried it, Chef Danny confirmed his theory regarding the peppers, and he also thought that a bird beak’s chili or another type of pepper was added because the salsa was very spicy. In addition, this taco’s flavor was all the way to the top because it was very good. The rib had a soft texture and one could perceive that the adobo had drenched itself well in it because one could taste it with each bite. Both the beans and the rice stood out a little bit more in this taco. This is why this taco gets a rating of 8.0.
