“Tacos de Birria El Paisa” in Tijuana gets a rating of 3.5 after a bone was found inside its quesabirria

This issue ended up taking off a lot of points despite it having a good flavor

On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “Tacos de Birria El Paisa” located at Calle Águila Condenada, Fracc. El Águila. On this occasion he tried two tacos: a birria taco priced at $1.44 dollars ($26 pesos) and a quesabirria priced at $2.77 dollars ($50 pesos).

Quesabirria

This taco has birria, cilantro, onion, red salsa, asadero cheese, and is served on two white corn tortillas. The first thing to note was that the outer tortilla was well fried, while the inner tortilla was softer; both were drenched in the birria grease. Just by seeing it our host said that this was going to be a “greasy delicious taco” as it also had a great amount of cheese.

When he took his first bite, Chef Danny claimed that the corn flavor intensified due to the grease. The meat was soft and had a good flavor, and he verified that it wasn’t as greasy when eating it. The salsa was quite spicy and the cheese created a good contrast. When he took his second bite, our host discovered that the quesabirria had a piece of bone in it, something that he claims taqueros must be careful with because it could be dangerous for someone to swallow it or bite it and hurt a tooth. This is why, despite it having a good flavor, this taco lost a lot of points and gets a rating of 3.5.

Birria Taco

This taco has birria, onion, coriander, red sauce, and is served on two corn tortillas. When he took his first bite, Chef Danny noticed that this taco had less meat than the quesabirria.

He spoke again about the great flavor that the grease adds to the tortillas. The salsa also had a good flavor despite it being very spicy and the meat was seasoned well and had a very soft texture. He claimed that the taco was missing more meat, as there was more tortilla than protein, which is why this taco gets a rating of 7.6.
