On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “Tacos Manuel” located at México 1, Predios Urbanos, 22710. On this occasion, he tried two tacos: an asada taco and an adobada taco, both priced at $1.57 dollars ($30 pesos).
Asada Taco
This taco has carne asada (grilled beef), onion, cilantro, guacamole, huevona sauce, and is served on a handmade corn tortilla. Danny stated that, at first glance, the meat looked juicy and with good flavor; however, he could not prove this until he tried it. The tortilla had a regular thickness.
When he tried it, Chef Danny was able to prove that three ingredients had good flavor: the corn tortilla, the huevona salsa, and the meat. With the meat, the marinade stood out as it seeped itself well with the protein and the coal flavor. The only negative thing about this taco was that it had very little avocado, which was an aguamole (guacamole diluted with too much water) mix. This is why this taco gets a rating of 8.2.

Adobada Taco
This taco has adobada, onion, coriander, guacamole, and is served on two store bought corn tortillas. At first glance, the adobada meat looked fried and with a good color, which usually means it’s going to have good flavor.
The tortillas were not a commercial brand as they had a different flavor, though the maize was subtler compared with the previous handmade tortilla. The meat’s adobo was similar to the one used for chorizo. As it was griddled and fried, this intensified the adobo; however, it isn’t similar to traditional adobada. In fact, since it was just tossed into the griddle, it took some points away. This is why this taco gets a rating of 6.2.
