“TKRBN” in Tijuana impresses due to their flavorful Spanish chorizo taco

The chorizo’s intense color was a sign that it was going to taste great

On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “TKRBN” located at Calle Germán Gedovius #10488, Zona Urbana Río Tijuana. On this occasion he tried two tacos: a Spanish chorizo taco priced at $1.9 dollars ($38 pesos) and a rib taco priced at $4.25 dollars ($85 pesos).

Rib Taco

This taco has chopped rib, cheese au gratin, onion, cilantro, guacamole, and is served on a flour tortilla. It is served with grilled onions, yellow hot chili peppers, and the bone from the same rib. Danny decided to add some charred sauce, along with three other separate salsas.

Our host stated that this taco needed a lot of sourness because it was full of fat. However, it had a lot of flavor, both for its tortilla and its salsa, which was balanced quite well. In addition, the guacamole was authentic as it was made completely out of avocado flesh. The rib was also cooked well and the cheese had a firm consistency that enveloped all the ingredients. This is why this taco gets a rating of 8.8.

Spanish Chorizo Taco

This taco has Spanish chorizo, onion, cilantro, avocado, and is served on two corn tortillas drenched in grease. Our host decided to add some green salsa. The first thing Chef Danny noticed about this taco was the intense color of the chorizo, though Danny would have liked it if they had added a little bit more guacamole.

When he took his first bite, Chef Danny confirmed that the intense color was a sign of the great flavor that it had. In addition, the fat level was lower than in other types of chorizo which made it lighter on the palate. The tortillas had an intense maize flavor and Chef Danny thought that the combination of the chorizo and the sourness of the green salsa complemented each other pretty well. This is why this taco gets a rating of 9.0.
