Sirloin taco with cheese crust by “Tacos Casa Sonora” amazes in Tijuana

The guacamole used for this taco was very sour which lowered its score

On this episode of Una Mordida Tacos Tijuana our host Chef Danny Betancourt went to “Tacos Casa Sonora” located at Parque Azteca Nte. 294-1, Playas de Tijuana. On this occasion he tried two tacos: a picanha taco priced at $3.5 dollars ($70 pesos) and a sirloin taco with cheese crust priced at $3 dollars ($60 pesos).

Sirloin Taco with Cheese Crust

This taco has sirloin meat, guacamole, onion, cilantro, and is served on a cheese crust. When he took his first bite, Chef Danny was impressed by its flavor. The cheese crust wasn’t completely hardened which gave it a more malleable texture, while feeling like melted cheese on the inside.

The cheese inside of the crust made the meat envelop itself in the taco. The guacamole had too much lime which made it very sour and made it lose some of the avocado flesh flavor. Chef Danny thinks that the meat is submerged in its juice once it is grilled because it had a very soft and juicy texture, even though it was only seasoned with salt and pepper. This is why this taco gets a rating of 8.3.

Price: $3 dollars ($60 pesos)

Picanha Taco

This taco has picanha (top sirloin cap), guacamole, onion, coriander, macha sauce, and is served on a flour tortilla. Something to note is that the picanha slice is served in one big piece without any cuts, which is why it is both fat and meat.

When he took his first bite, Chef Danny stated that the tortilla was very thin which made it lose the flour flavor. Our host thinks that a thicker tortilla would be ideal. Though the meat cut was quite big and it was cooked perfectly, Chef Danny didn’t like the fat portion since it was quite big. Though this is, in essence, what picanha is, he would have preferred if the greasy portion had been thinner. Though the guacamole wasn’t entirely watery guacamole, it was somewhat diluted. This is why this taco gets a rating of 7.9.
