On this episode of Una Mordida Tacos Tijuana our host Chef Danny Betancourt went to “Tacos y Tortas Ahogadas El Tío Pepe” located at José López Portillo, Colonia Gabilondo. On this occasion he tried two tacos: a carnitas taco priced at $2 dollars ($40 pesos) and a Chavez Especial taco priced at $3.25 dollars ($65 pesos).
Chávez Especial Taco
This taco has a variety of pork carnitas (rib, belly, and lean meat), guacamole, pico de gallo, purple onion, cheese, and is served on a handmade corn tortilla. When he tried it, the first thing Chef Danny highlighted was that the cheese used is not the one usually used in other taquerias.
Danny stated that his cheese’s flavor was similar to ranchero cheese. The tortilla was not able to withstand the weight of all the ingredients and the meat, so it broke. Chef Danny was able to distinguish all the types of meats and taste how soft they were. Avocado flesh was served too which added more flavor. He also noticed that the taco was griddled which created a crust, but also made the meat dry. This is why this taco gets a rating of 8.1.

Carnitas Taco
This taco has lean meat and hide, guacamole, recommended green salsa, and is served on a handmade corn tortilla. At first, Chef Danny mentioned the soft texture and softness of the hide.
The green salsa that was recommended was not very spicy, and its acidity was the right level, mixing well with the taco. The lean meat was not very dry, but its saltiness level was quite high. Chef Danny claimed that the avocado flesh makes the taco stand out, which is why it gets a rating of 8.5.
