On this episode of Una Mordida Tacos Rosarito, our host Chef Danny Betancourt went to “Carnitas La Flor de Michoacán” located at Blvd. Benito Juárez 291, Predios Urbanos, 22710. On this occasion he tried two tacos: a surtida taco and a maciza taco, both priced at $1.57 dollars ($30 pesos).
Maciza Taco
This taco has maciza (lean pork), onion, cilantro, red salsa, guacamole, and is served on a handmade corn tortilla. The first thing Chef Danny said when he tried it was that it was a ”two-bite taco” as that was the number of bites in which he finished it.
The saltiness level of the meat was a little high. However, one could taste the flavor of it being parboiled as well as the fact that it wasn’t very dry. The sauce was “huevona salsa” which was somewhat spicy. The tortilla had good thickness and was humid despite its small flavor. The diluted guacamole wasn’t really aguamole (guacamole diluted with too much water), but it wasn’t pure avocado flesh either; it added freshness, however. This is why this taco gets a rating of 8.6.

Surtida Taco
This taco has buche (pig belly), cuerito (pig skin), maciza (lean pork meat), onion, cilantro, guacamole, huevona salsa, and is served on handmade corn tortilla. This taco was more flavorful than the previous one. Chef Danny also said that if the tortilla had been bigger, it would have been ideal.
In the meat, one can detect several condiments, and the fact that they are given the necessary time so that they get cooked correctly. The tortilla was similar in size to packaged tortillas used for adobada tacos, but this one is thicker and was made in that very moment. The salsa was once again quite spicy, which is why this taco gets a rating of 8.8.
