On this episode of Una Mordida Tacos Rosarito, our host Chef Danny Betancourt went to “Birria El Torito” located at Blvd. Benito Juárez 388, Machado Nte., 22703. On this occasion, he tried two tacos: a supreme quesadilla priced at $6.3 dollars ($120 pesos) and a coronado taco priced at $2.63 dollars ($50 pesos).

Supreme Quesadilla

This taco has beef birria, onion, cilantro, beans, cheese, and is served on a flour tortilla. Our host began by saying that the flour tortilla had a good size and was fried quite well. Something interesting about this dish is that it had a garnish of chilaquiles with birria and cream.

When he took his first bite, Chef Danny claimed that the meat had a very soft texture and its birria was seasoned well. The tortilla was somewhat thin which he didn’t really like. The combination between the cheese and the rest of the ingredients was very good. The sauce used for chilaquiles also had a great flavor, which is why this taco gets a rating of 8.8.

Coronado Taco

This taco has beef birria, onion, cilantro, beans, cheese crust, green salsa, and is served on two store bought corn tortillas. Something unique about this taco is that the cheese crust was placed on top of the ingredients instead of being the base alongside the tortillas.

When he took his first bite, Chef Danny said that the maize flavor was present and intensified thanks to the birria grease. The fried tortillas created a crunchy texture outside and inside one could feel the softness of the meat and the beans. The green salsa added a lot of flavor and sourness. The meat was quite juicy, and the cheese crust did not overwhelm at all. Chef Danny claimed that this was a complete taco as it had great flavor and was well balanced. This is why this taco gets a rating of 9.3.
