Pig skin and buche by “Carnitas Sahuayo” in Rosarito lose points for being “extremely salty”

The maciza meat was on the brink of saltiness

On this episode of Una Mordida Tacos Rosarito, our host Chef Danny Betancourt went to “Carnitas Sahuayo” located at Centro Carretera, 22700. On this occasion, he tried two tacos: a maciza taco and a surtida (pork mix) taco, both priced at $1.31 dollars ($25 pesos).

Surtida Taco

This taco has buche (pork belly), maciza (lean pork), cuerito (pig skin), onion, cilantro, guacamole, and is served on a handmade corn tortilla. Chef Danny highlighted that the tortilla was clearly handmade, because of its thickness and its texture.

When he tried the taco, Chef Danny was surprised by its flavor, however, what wasn’t a pleasant surprise is that the meat was very salty. The maize flavor in the tortilla was present and the vegetables created a good contrast, however, the maciza was somewhat hard, while the pig skin was soft. According to the chef, both the buche and the cueritos were “extremely salty”, which made the taco lose points despite the tortilla’s good flavor. This is why this taco gets a rating of 6.5.

Maciza Taco

This taco has maciza, onion, cilantro, guacamole, and is served on a handmade corn tortilla. When he took his first bite, Chef Danny claimed that he could notice the difference in this taco. He decided to add a few lemon drops to add the sourness it was missing.

Though the maciza was on the brink of saltiness; it still had a tough and somewhat dry texture. The onion, cilantro, and guacamole created a good contrast with the lime juice which helped it stand out. This is why this taco gets a rating of 7.5.
