Taco al pastor by “Asadero Los Fogones del Danny” in Mexicali lacks flavor

Though the carne asada was quite good, the adobada meat didn’t have the same result

On this episode of Una Mordida Tacos Mexicali, our host, Chef Danny Betancourt went to “Asadero Los Fogones del Danny” located at Calz. Independencia 1799, Pueblo Nuevo. On this occasion he tried two tacos: a taco al pastor and a carne asada (grilled meat), both priced at $1.6 dollars ($31 pesos).

Carne Asada Taco

This taco has carne asada (grilled meat), cilantro, charred sauce, avocado sauce, and is served on a packaged flour tortilla. Danny said that it is possible to distinguish between a packaged and a handmade tortilla, because the former has less thickness and when it is heated, it doesn’t swell like a homemade one. It should be noted that this tortilla was smaller than tortillas from other places he has visited.

When he took his first bite, the first thing Chef Danny noticed was that the meat was sliced in small pieces, though it was a thick cut. He also said that it had a lot of flavor and the smoked taste was easily perceived. Chef Danny also stated that the meat had been kept in its own juices, which increased the flavor. The charred sauce was quite good and intensified the meat’s touches. The only thing that Danny did not like was the flour tortilla, since he doesn’t think it’s the best one he has tried. This is why this taco gets a rating of 6.7.

Taco al Pastor

This taco has al pastor meat, onion, coriander, and is served on the same packaged flour tortilla as the previous taco. Chef Danny decided to add a few lime drops and, before trying it, he said that the meat was missing color, describing it as “pale”.

When he took his first bite, our host reiterated the subtlety of the adobo which meant that the taco felt as if it was lacking in flavor. Just like the previous taco, the tortilla was the ingredient with the least amount of taste. Though the taco’s serving size was quite good, its lack of flavor didn’t really help. This is why it gets a rating of 6.5.
