Flour tortillas by “Tacos Varios El Jefe” in Mexicali are rated as excellent

The sauce of this taqueria delighted Chef Danny Betancourt

On this episode of Una Mordida Tacos Mexicali, our host Chef Danny Betancourt went to “Tacos Varios El Jefe” located at Calz. Lázaro Cárdenas, Residencial Mediterráneo. On this occasion he tried two tacos: a shredded meat taco and a pork rind taco, both priced at $1.5 dollars ($28 pesos).

Shredded Meat Taco

This taco has shredded meat, onion, tomato, potato, a bed of beans, Mexican husk tomato sauce with bird beak’s chili, and is served on a handmade flour tortilla with quite a nice size. Before trying it, Chef Danny said that in Mexicali they are known as tacos but are actually usually known everywhere else as burritos, so he decided to eat it as a burrito, but review it as a taco.

When he took his first bite, Danny highlighted the great flavor of the sauce which he described as having the right level of acidity, good seasoning, and not being too spicy. He added that he was able to appreciate the tortilla’s recently made flavor. The beans were refried creating a pasta. The meat had quite a soft texture and the great sauce gave this taco a rating of 8.3.

Pork Rind Taco

This taco has pork rind in a sauce, refried beans, and is served on a handmade flour tortilla just as the previous taco. Something interesting to note is that Chef Danny said that all the stew tacos he has tried in Mexicali have been served on flour tortillas. When he took his first bite, he added that something they really know what to do in Mexicali is pork rind.

This pork rind was prepared in a morita chili pepper sauce with quite an intense flavor and a subtle spiciness. This protein was not just skin, but also had pieces of meat and had a very good texture. The star of this taqueria, however, was the flour tortilla, which Chef Danny described as excellent as it was homemade, had a great flavor, and was a great supplement to the pork rind. Because of all of this, this taco gets a rating of 8.9, being the second highest rating that a taco in Mexicali has received.
