Intense lamb taco flavor from “Tacos Guanajuato” in Mexicali gets a rating of 7.8

The tortillas were also the stars this afternoon

On this episode of Una Mordida Tacos Mexicali, our host Chef Danny Betancourt went to “Tacos Guanajuato” located at Calzada Lázaro Cárdenas. On this occasion he tried two tacos: a lamb taco and a beef head taco, both priced at $1.3 dollars ($25 pesos).

Beef Head Taco

This taco has beef head, onion, cilantro, and is served on two corn tortillas. When he took his first bite, Chef Danny said that the tortillas had good thickness as well as an intense maize flavor. He added that one can notice that they were steamed due to their soft texture and the grease they were drenched in gave them more flavor.

Danny said that that meat was seasoned well, but had a condiment that gave it a quite peculiar flavor. He was not able to identify this specific ingredient but said that it could be clove, cumin, or anise. Both the onion and the coriander went well with this taco which is why it gets a rating of 7.5.

Lamb Taco

This taco has lamb meat, cabbage, coriander, and is served on two corn tortillas which, just like the previous taco, were drenched in grease. Chef Danny decided to add a little bit of sauce that the workers said was prepared with different kinds of chili peppers, which is why he expected it not to be that spicy.

Before trying it, Chef Danny said that the lamb meat’s smell was very characteristic, which is more intense the older the sheep is. This taco had a very strong smell and when he tried it he confirmed that the grease taste was quite present. However, the stars this afternoon were the tortillas which had great flavor, thickness, and soft texture. Chef Danny even decided to remove one of them and squeeze the taco, and the tortilla never broke. The sauce also had a great flavor which gave the taco a nice touch which is why it gets a rating of 7.8.
