In this episode of Una Mordida Tacos Rosarito, our host, Chef Danny Betancourt went to Asadero Pepes, located in Plaza Villa Floresta in Rosarito. Here he tried two tacos: an adobada taco and a tripe taco, both priced at $1.5 dollars (30 pesos).
Tripe Taco
This taco has beef tripe, red sauce, onion, coriander and is served in a handmade, small corn tortilla. Chef Danny expected and assumed that it would have great taste, as it is also served with onions and jalapeño pepper. When he tasted the taco, he discovered that the tortilla was not dry and had a subtle, but nice flavor due to its thickness and texture.
The sauce wasn’t too spicy when mixed with all the ingredients, but the thing that didn’t convince Chef Danny was the tripe. Its taste was a tad bitter, though it had good texture, by being juicy inside and crunchy outside. When he inspected the taco, he realized that some of the meat pieces were burned which caused the bitterness; when he tasted them by themselves unburned, they had good flavor. This taco gets a rating of 8.2.

Adobada Taco
At first glance, this taco looks quite “stuffy”, that is, there a lot of things in it, for it has the adobada meat, avocado flesh, onion, coriander, sauce and is served in the same tortilla as the previous one. This taco is also served with cucumbers and pickled carrots.
A thing that our host noted in this taco was the color of the adobada meat, which was pale: an omen that the usual flavor of the adobada taco was not going to be noticeable on the first bite, which was the case. Chef Danny thought the flavor was closer to an “al pastor” taco since it was sweeter and lighter than normal adobo. Overall, the meat was lacking in that certain “flair” in its flavor, but the supplements served with the taco were quite good, which is why this taco gets a rating of 8.0.
