Rosarito’s Los Panchos gets an 8 for a very tasty assorted taco

Their tortillas also surprised Chef Danny quite a lot

In this episode of Una Mordida Tacos Rosarito, our host, Chef Danny Betancourt went to Carnitas Los Panchos, located in the Free Highway Rosarito KM 21.5, Lucio Blanco. Here he tasted two carnitas tacos: shredded pork (carne maciza) and an assorted (surtido) taco. Both are priced at $1.5 dollars (30 pesos).

Assorted Taco

This taco has the shredded, hide, and crop pork meat, as well as onion, coriander, Mexican husk tomato sauce with jalapeño, tomato, and is served in a handmade tortilla, which is quite unusual for carnitas tacos. The first thing Danny noticed was the thickness and the flavor of the corn tortilla which was very intense and very soft.

A good carnitas taco distinguishes itself with a good corn tortilla. When he took his first bite, Chef Danny was able to notice the flavors of the husk tomato sauce, and though it has a nice taste, it is a little bit salty. The hind, which usually is flavorless in a lot of stands and taquerias, was quite tasty. This is why this taco gets a rating of 8.4.

Shredded Pork Taco

This taco has the shredded pork, coriander, onion, and also guacamole which gives it creaminess and humidity. It is served in the same sauce and tortillas as the previous taco. When he gave it his first bite, the first thing Chef Danny noticed was that the taco was very dry.

Although this type of taco tends to be quite dry, for this kind of meat is not that greasy, Chef Danny still felt that there was a “stew-like” flavor missing in the meat. The sauce and guacamole really helped it in regard to its humidity, but our host didn’t really like this because he had to add lime and salt so that the flavors could complement each other. This taco does need to be dressed in a lot of sauce and lime to make it humid, and this is why this taco gets a rating of 6.8.
