“Hijos de Maíz” in Tijuana serves a very interesting milanesa taco with lettuce and mayonnaise

Chef Danny also tried a chicharron taco with grilled onion

On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “Hijos del Maíz” located at Blvd. de Las Américas 4370, Lomas de Agua Caliente. On this occasion he tried two tacos: a chicharron taco and a milanesa taco, both priced at $2.25 dollars ($45 pesos).

Chicharron Taco

This taco has chicharron (pork rind and skin), onion, cilantro, grilled onion, green salsa, and is served on a corn tortilla. Chef Danny said that the grilled onion was added because it was recommended by one of the restaurant’s workers.

When he took his first bite, Chef Danny identified that the chicharron had meat, which gives it a different contrast. The salsa wasn’t very sour, which helped the protein stand out more. The onion was caramelized pretty well and had a sweet touch due to its natural taste. The tortilla got lost amongst all the ingredients and since it wasn’t fried or steamed, it had a very a rigid texture. According to our host, the salsa was missing a “push” of flavor. This is why this taco gets a rating of 7.7.

Milanesa Taco

This taco has milanesa (breaded meat), avocado slices, green salsa, lettuce, mayonnaise, and is served on a corn tortilla. Before he tried it, Chef Danny said that it was a very peculiar taco as it had lettuce served with the protein; something different from the previous taco is that the tortilla in this taco was more fried.

When he tried this taco, Chef Danny was surprised at discovering that it had mayonnaise, which gave the taco a different flavor. However, it ended up overwhelming all the other ingredients because there was a lot of it in this taco. The avocado was a great complement for the milanesa as it had a softer texture than the tortilla. Just like in the previous taco, the salsa was present, though it lacked intensity both in its spiciness and its flavor. Lastly, the lettuce added a very interesting freshness, which is why this taco gets a rating of 7.8.
