Michelle Fridman, Secretary of Tourism of Yucatán stated that she is looking to invite people from California and Baja California to this state located in southern Mexico. Conveniently, there is a direct flight that connects Tijuana with Merida, making it a very accessible place.
When going to Yucatan, one can enjoy several activities such as going to the beach, haciendas, Mayan ruins and learning all about their customs. One can also visit the cenotes and enjoy its gastronomy. This gastronomy is the main subject on this year’s campaign “365 Flavors of Yucatan”.
During this campaign, chefs and traditional cooks are brought from all over Yucatan towns and then they “take” cuisine from other Mexican chefs. This happened in Tijuana where they mixed Yucatan and Baja Californian gastronomies. One of these cooks, Rosalía Chay of the Yaxunah community, even appeared on the Netflix show “Chef’s Table”.
Rosalia stated that she learned from her grandmothers, who taught her ancestral dishes such as cochinita pibil and black stuffing. Other chefs such as Alejandra Kauachi and Vidal Elias were also present, the latter claiming that the sea of Baja California is the most blessed in the country due to its great variety of seafood. It has been described as “the best seafood pantry in Mexico.”
Drew Deckman was one of the Baja Californian chefs that shared the kitchen with Elias, Kauachi, and Chay. He stated that he was looking to fuse two cuisines, celebrating two peninsulas located on opposite sides of the country.
