“El Gordo Chon” in Tecate surprises due to their griddled birria taco with beans

On this episode of Una Mordida Tacos Tecate, our host, Chef Danny Betancourt went to “Tacos El Gordo Chon” located at Av. Nuevo León 163, El Pedregal. On this occasion, he tried two tacos: a birria taco priced at $1.25 dollars ($25 pesos) and a special taco priced at $1.75 dollars ($35 pesos).

Birria Taco

This taco has beef birria, onion, coriander and is served on two corn tortillas drenched in the same grease as the birria. When he gave his first bite, Chef Danny said that the flavor was very good. In this taco one can appreciate the maize flavor of the tortillas.

The meat had a very soft texture that mixed quite well with the corn with each bite. The vegetables, like in any other birria taco, gave it a fresh touch. Chef Danny was not able to feel the sauce on this occasion which was a good thing for him for he has tried very spicy sauces in Tecate. The birria had a light adobada flavor without it being too invasive or intense. The only thing Danny would have liked was that it was fried. Because of this, it gets a rating of 8.3.

Special Taco

This taco has birria meat, onion, coriander, fried onion, pig beans, and is served on two deep fried corn tortillas drenched in birria grease. What makes this taco different is that the birria meat does not come directly from the pot but is instead griddled, which reduces the protein’s humidity.

The tortilla drenched in grease gave the taco a nice flavor. The ingredient that did lose taste was the meat which, like Danny predicted, lost a lot of its humidity due to being griddled, making the overall taco quite dry. Danny decided to add sauce to see if this changed, but it did not remove its dryness. In spite of this, Danny thinks that the flavors of the taco, the deep-fried tortilla, and the meat were quite good which is why this taco gets a rating of 8.1.
