This griddled adobada taco will surprise your palate

The handmade tortillas also delighted our host

In this episode of Una Mordida Tacos Tijuana, our host, Chef Danny Betancourt, went to Tacos Taqualli. These are located in Calle José Gorostiza in Zona Urbana Río, Tijuana. In this taqueria, he tried two tacos: a Taqualli taco priced at $4.5 dollars (90 pesos) and a special adobada taco priced at $3.75 dollars (75 pesos).

Taco Taqualli

The first taco that was given to our host has Rib Eye meat, cheese, guacamole, onion, coriander, pepper slices, served in a recent handmade tortilla, and, interestingly, it is drenched in marrow. The first thing that Chef Danny noted was the intense flavor of the corn as well as the tortillas’ thickness, which can be noticed immediately after the first bite.

The meat was seasoned with salt and pepper. The cheese was presented in a crust and the guacamole, though it was only the avocado’s flesh, tasted as if it was past its date. Chef Danny tasted the pepper slices on his second bite and the marrow, though being mostly grease what was drenching the taco, did not overwhelm with its flavor, though it did make it fatty. The vegetables had a nice flavor, which means this taco gets a rating of 7.7.

Special Adobada Taco

This was the second taco that was given to Chef Danny. He was told that though the pork leg is smoked, it is cooked in a griddle which changes its flavor. This taco has the adobada pork leg, coriander, onion, guacamole, cheese crust, bitter cream, and is served in a handmade tortilla like the previous tortilla.

When he took his first bite, Danny discovered that the taco had a caramel taste, which gave a twist to the classic adobada taco. As previously mentioned, it was possible that it being griddled would change the flavor, but this wasn’t the case, for the taco was seasoned quite well and its texture was quite soft. In our host’s opinion, the only thing that this taco was missing was a little bit more of cheese, but the tortillas was the main star of this dish. This is why this taco gets a rating of 8.2.
