Discover the bittersweet marlin taco by "Mariscos El Zurdo" that is surprising Tijuana

A Thousand Island dressing added sweet touches to the taco

On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “Mariscos El Zurdo” located at Calz. del Tecnológico 304, Altabrisa. On this occasion he tried two tacos: a battered fish taco priced at $1.47 dollars ($25 pesos) and a marlin taco with cheese priced at $2.94 ($50 pesos).

Battered Fish Taco

This taco has battered fish, pico de gallo, cabbage, sour cream, Thousand Island dressing, and it is served on two corn tortillas. The first thing to note was that the tortillas had a good size and were bigger than usual, and that the batter had a good color. However, the key ingredient was the fish.

When he took his first bite, Chef Danny was surprised by the sweet taste of the Thousand Island dressing because he thought that it was a chipotle dressing, but the sweet touches of the ketchup and mayo created a good contrast. Though the batter still had a great deal of flavor due to the touches of beer yeast and its texture, the fish flavor was lost because it was a very light and thin white fish. This is why this taco gets a rating of 7.3.

Marlin Taco with Cheese

This taco has marlin stew, asadero cheese, cabbage, tomato, sour cream, Thousand Island dressing, and it is served on two corn tortillas. The first thing to note about this taco is that the outer tortilla was fried with a great color.

Chef Danny claimed that the tortilla had been buttered and that increased its maize flavor. He added that in this establishment they like playing with bittersweet touches because besides the dressing, the marlin stew had carrot, which releases its sugars when cooked. This is not something that our chef quite liked, but he did say it created an interesting contrast. The marlin had a good flavor and humidity thanks to the stew broth, which is why it gets a rating of 7.7.
