“Tacos El Paisa” in Tijuana gets a rating of 7.9 due to their dry tripe taco

On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “Tacos El Paisa” located at Blvd. Gustavo Díaz Ordaz, Huertas 5ta Secc, 22127. On this occasion he tried two tacos: an adobada taco priced at $1.7 dollars ($32 pesos) and a tripe taco priced at $2 dollars ($39 pesos).

Adobada Taco

This taco has adobada meat, watery guacamole, onion, cilantro, red salsa, and is served on two packaged corn tortillas. The first thing to note about this taco is that the tortillas were made quite well, as they had been drenched in the adobada grease, which made them look not very dry. However, Chef Danny stated that there was no way to know whether they would taste good or not just by looking at them.

When he took his first bite, our host was surprised by the tortilla as it was humid and did not feel chewy. The adobada had a very good flavor which is something Chef Danny noticed when he saw its intense red color. It was a little too sweet for his taste, being very similar to al pastor tacos. The sauce wasn’t spicy, but the negative thing about this taco was its watery guacamole. This is why this taco gets a rating of 8.1.

Tripe Taco

This taco has tripe, onion, cilantro, green sauce, and is served on two packaged corn tortillas. At first, the tripe was fried in such a way that it looked like as if it would have a lot of flavor. Chef Danny stated that he hoped that it tasted as good as it looked.

The first thing to note about this taco was the salsa, as it was ideal for this tripe taco which had been drenched in grease and oil. It made it very fried, which means that the salsa’s sourness neutralizes its heavy flavor. However, the protein was very dry. The tortillas were also drenched in grease, which is why they were quite humid. This is why this taco gets a rating of 7.9.
