Interesting flavor of birria taco with tripe by “Tacos Fitos” surprises in Tijuana

This is called a “campechano taco”

On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “Tacos Fitos” located at Fco. Javier Mina, Zona Río. On this occasion, he tried two tacos: a birria taco and a campechano taco both priced at $1.5 dollars ($30 pesos).

Campechano Taco

This taco has birria meat, tripe, onion, cilantro, salsa, and is served on two grease-drenched tortillas. The first one was fried while the second one had a soft texture, both regular-sized. When he took his first bite, Chef Danny claimed that the combination of the tripe with the birria meat was quite interesting.

He said that the pasty consistency of the tripe’s interior mixed well with the meat which had a similar texture. This mixes with the chewy tripe exterior and the tortilla’s crunchiness. The sauce seemed like it was very spicy, but it wasn’t the case. Danny thought that the taco was missing a bit more birria adobo, and it was also somewhat salty. This is why this taco gets a rating of 8.6.

Birria Taco

As any other traditional birria taco, this one has meat, onion, coriander, red salsa, and is served on two corn tortillas. Chef Danny said that at first it looked quite dry since neither the tortilla nor the paper felt humid. However, when he took a bite, the birria’s juice was expelled.

Chef Danny stated that the taco’s flavor was good but subtle, since it wasn’t very intense. The tortillas were not even drenched in the broth’s grease, which is why he said this taco is ideal for those who like their birria “lighter”. The tortilla had a good maize flavor. Though the meat had a nice taste and a soft texture, which meant it was cooked well, Chef Danny insisted that the adobo needed more intensity. This is why this taco gets a rating of 8.0.
