Salty suadero taco by “Tacos El Chef” in Tijuana gets a rating of 6

The salsa used was too spicy

On this episode of “Una Mordida Tacos Tijuana”, our host Chef Danny Betancourt went to “Tacos El Chef” located at Av. Francisco Javier Mina 11628, Mariano Matamoros. On this occasion, he tried two tacos: a rib taco priced at $1.75 dollars ($35 pesos) and a suadero taco priced at $1.5 dollars ($30 pesos).

Suadero Taco

This taco has suadero (cut between belly and leg), red sauce, watery guacamole, and is served on two corn packaged tortillas. When he took his first bite, Chef Danny felt two flavors completely overwhelming his palate: the spicy hot salsa and the suadero, which was very salty.

Danny said that something good about this taco is that the meat was quite soft inside and fried outside, giving it great consistency. However, this did not help to fix the high saltiness level. He added that though everyone’s palate is different, in some cases there needs to be a good balance in the seasoning. The avocado ended up being watery guacamole and the tortillas had a small size. This is why this taco gets a rating of 6.5.

Rib Taco

This taco has beef rib, watery guacamole, onion, cilantro, charred sauce, and is served on a corn tortilla. The first thing Chef Danny noticed was that the tortilla was different than the previous taco. It was only one and it was bigger. Something curious to note is that besides the meat, a bone rib was also added which Danny removed from the taco and put aside.

Danny said that everything indicated that the tortilla was especially made for this place because it was humid correctly and looks different. Regarding the protein, he said that one could taste the grease of the meat which is why marrow lovers will love it since the grease has a soft consistency. It also matches the tortilla perfectly. The sauce was barely noticeable among the ingredients which is why this taco gets a rating of 7.8.
