With the breading of their milanese, these varied tacos in Tijuana conquer

The other taco he sampled received mixed reviews

Tacos, with their limitless varieties, presentations, meats, and accompaniments, are without a doubt the food that most closely embodies Mexico and its people. Chef Danny Betancourt takes us to three new taquerias every week at Una Mordida Tacos Tijuana, and this time he went to Tacos Various Memo, a taco cart on Calle Sexta Flores Magón 8724 in the Zona Centro, where our host tried two tacos, one with pork rinds in red sauce and the other with beef milanesa, both for $25 pesos ($1.25 dlls).

Taco de Chicharron

This was Danny's first taco, and it included chicharrón in red sauce, a bed of beans, and a bed of rice, all served on two corn tortillas. Our host like the flesh chunks in this pork rind, but another aspect that stuck out was the flavor of the beans.

Danny observed that the chicharrón tasted like cumin, and that the sauce in which it was dipped, although providing sufficient moisture to the taco, was rather neutral, lacking in flavor "punch." Although the meat and pig rinds provided a nice contrast, this taco needed to provide more of this protein because it was lacking, therefore it received a 6.6.

The cost is $25 pesos ($1.25 dlls).

Tacos with Beef Milanesa
This taco features milanesa de res, a bed of rice, a bed of beans, guacamole sauce with tomatillo, and is served in two corn tortillas that are somewhat smaller than corn tortillas, much like the past taco. They produce a decent big taco with all the extras on the table. The breaded taste of the milanese and the suppleness of the meat were the first things that struck me when I tried it.

The sauce was another good compliment because it gave the taco with the appropriate moisture without being overly liquid, because it was thick, and because the acidity was a wonderful "match" for the taco. Although the breading was a little watery owing to the time the proteins were kept in containers, Danny didn't mind, and he claims that it would have been much better if he had had this taco with the freshly prepared milanesa. This one received an 8.1 rating due to the good flavor balance in general.
